Ingredients

4 slices bacon
1 1/2 lb. bone-in, skin-on chicken thighs (about 4)
Kosher salt
Freshly ground black pepper
1 small red onion, finely chopped
8 oz. mushrooms, thinly sliced
2 garlic cloves, minced
1 small bunch of thyme
3/4 c. low-sodium chicken broth
3/4 c. heavy cream
1/3 c. finely grated Parmesan
Juice of 1/2 lemon
Finely chopped fresh parsley, for serving

In a large skillet over medium heat, cook bacon, turning occasionally, until crispy, about 8 minutes. Drain on a paper towel-lined plate; reserve about 2 Tbsp. fat in skillet.

Season chicken all over with salt and pepper. Increase heat to medium-high, then add chicken to skillet skin side down. Cook, undisturbed, until golden and seared, about 5 minutes, then flip and cook until second side is seared, about 5 minutes more. Transfer chicken to another plate.

Add onion and cook, stirring occasionally, until beginning to soften, about 5 minutes. Stir in mushrooms; season with salt and pepper. Cook, stirring often, until golden, about 5 minutes. Stir in garlic, then add broth, cream, Parmesan, thyme, and lemon juice. Bring to a simmer and cook for 5 minutes.

Return chicken to skillet and simmer, stirring occasionally, until an instant-read thermometer inserted into thickest part of chicken registers at least 165° and sauce is thickened slightly, 10 to 20 minutes more.

Chop bacon and sprinkle over chicken. Top with parsley.
