This keto-friendly, low-carb mac and cheese is totally pasta-free, thanks to cauliflower.

Arrange a rack in center of oven; preheat to 375°. Grease a 13” x 9” baking dish with butter. In a large bowl, toss cauliflower with 2 Tbsp. oil; season with 1 tsp. salt. Spread cauliflower between 2 large baking sheets.
Roast cauliflower until tender and lightly golden, about 40 minutes. Let cool slightly.
Meanwhile, in a large pot over medium heat, bring heavy cream to a simmer. Reduce heat to low and stir in cream cheese, cheddar, and mozzarella until melted and fully combined.
In a small bowl, mix arrowroot starch and 3 Tbsp. water. Remove cheese sauce from heat and mix in slurry. Stir in hot sauce (if using); season with pepper.
Fold cauliflower into sauce; season with salt and pepper, if needed.
Transfer mixture to prepared dish. In a medium bowl, stir pork rinds, Parmesan, and remaining 1 Tbsp. oil. Sprinkle pork mixture in an even layer over cauliflower mixture.
Bake mac & cheese until topping is golden brown, about 15 minutes. If desired, turn on broiler. Broil, watching closely, until topping is toasted, about 2 minutes.
Let sit 5 minutes. Top with parsley.
